SEVEN HILLS, Ohio -- When it comes to chicken wings and beer, there’s a new boss in Seven Hills.

Beginning today (Jan. 20), the brand-new Boss ChicknBeer, located in the Town Center Plaza, will be open from 4 to 10 p.m. Monday through Saturday.

Once a liquor license is approved, the soft opening will give way to regular hours at the 1,800-square-foot Broadview Road restaurant.

“Everybody in Seven Hills has been super nice, super supportive,” said Heather Doeberling, who co-owns Boss ChicknBeer with Emily Moes. “It’s been crazy.

“Even the Parma Area Chamber of Commerce, which Seven Hills is a part of, is excited and ready to tell the universe. That’s really all we can ask for.”

A self-explanatory business model if there ever was one, Boss ChicknBeer boasts crispy chicken wings along with gluten-free and vegan offerings served with Buckeye State craft beer options.

There are also chicken sandwiches, hand-cut fries, macN cheese, pickled vegetables, Brussel sprouts, cole slaw and chili.

“We’re bringing everything we have, the full arsenal, to Seven Hills,” Doeberling said. “They’re getting the biggest, baddest Boss that exists with a full menu and all of the specials.

“Boss caters to a lot of special dietary needs. We’re really experts at celiac disease. We have a full plant-based menu that is totally vegan. Everything that comes in a chicken variety also comes in a vegan variety and also comes in a gluten-free variety as well.”

In terms of the atmosphere, Doeberling called Boss ChicknBeer a “chicken wing diner” where just short of everybody knowing your name customers when visiting will enjoy an interactive and friendly experience with some laughs to boot.

“We want to meet everyone,” Doeberling said. “We want to get to know you. We’re also going to have some really great food.”

The culinary team of Doeberling and Moes started out in 2014 by opening popular food truck Boca Loca. That success led to the creation of the brick-and-mortar Boca Loca Burrito Factory Restaurant in Berea.

From there the two sold the food truck and closed Boca Loca Burrito Factory Restaurant only to open Boss ChicknBeer in Berea and later in Bay Village.

“Our Bay Village location is very small and kind of niche,” Doeberling said. “Our Berea location is our flagship store, but in Seven Hills you can actually come in and bring your family. We also have room for parties.”

When it came time to open another Boss ChicknBeer location, Doeberling said the appeal of Seven Hills was too good to pass up.

“We want to be in a place where the community vibe is super strong, people really believe in their town and they support local,” Doeberling said. “That’s really what we like about Seven Hills. They deserve something to be excited about.”
