Make that two ghost kitchen concepts under chef Lanny Lancarte's belt.
His Pizza Zapasta — part of a trifecta of pickup- and delivery-only restaurants under the umbrella company, Fantasma Kitchens — soft opens for lunch and dinner on Thursday. It's located at 1300 Gould Ave., joining another Fantasma Kitchens concept, Eat Fajitas, which opened in 2020.
The menu at Pizza Zapasta has a notably Italian-meets-Mexican flair. Signature pizzas include Esquites con Flor de Calabaza, a white pizza topped with grilled corn, roasted poblano, Mojo de Ajo (a garlic sauce), and grated Parmigiano Reggiano; Chupacabras, which features goat and beef salami; and Barbacoa and Fennel which, as the name suggests, includes Wagyu barbacoa and braised fennel.
The rest of the menu lists signature pastas like housemade gnocchi sardi and rigatoni with barbacoa Bolognese, a build-your-own-pizza option, margaritas, cocktails, wine, and non-alcoholic beverages like a blackberry limonada, Mexican Coke, and Jarritos. For dessert, grab an order of housemade churros or paletas and ice cream made by another local brand, MELT.
Pizza Zapasta adds to Lancarte's growing portfolio of brands. Part of the family that owns Joe T. Garcia's, Lancarte is perhaps best known for Righteous Foods, his health-conscious, clean-eating restaurant on West Seventh Street. He launched Eat Fajitas out of Righteous last year, which naturally took off amid the pandemic, and has since moved to its own space on the North Side of Fort Worth. A fried or al Carbon chicken concept, El Pollo Tocayo, is also in the works.
